Sun-dried Tomato Pesto
Ingredients:
One 8.5 oz jar of sun-dried tomatoes with herbs.
2 cups of spinach.
2 teaspoons of Cultivate Tea & Spice Italian Kitchen seasoning.
2 tablespoons of fresh chopped basil.
1/4 cup almonds or cashews ... I’ve used both and they are both delicious.
3 garlic cloves.
1tsp of lemon zest and juice from 1/2 lemon.
1/4 cup water.
Directions:
Blend in a Vitamix or food processor until everything is well blended.
Toss with lightly sautéed spinach and zucchini noodles.
Top with crushed red pepper and nutritional yeast if you’d like and enjoy!
Note: You may have already guessed, but this pesto is pretty much delicious on anything!
