Coconut Curry Lentils and Jasmine Rice


1.5 Cups Red Lentils

2 Medium Diced Carrots

1 Red Bell Pepper Diced

1 Large Onion Chopped

1 -2 Tbs fresh minced ginger

4 - 5 Cloves Garlic Chopped

1/2 Tbs avocado oil

3 cups veggie broth or water

1.5 Cup Canned Coconut Milk

1-2 Tbs Coconut Sugar

2 Tbs Cultivate Tea and Spice Curry Powder

Sea Salt and Pepper to Taste


1. Cook Jasmine Rice according to instructions.  

2.  While rice is cooking, saute the carrots, peppers, onions, and ginger with avocado oil until tender, then add lentils, seasonings, broth and coconut milk.  Simmer until lentils are tender (15 - 20 minutes).

3.  Serve over rice!  Top with cilantro, scallions, and fresh lime (optional....but delicious!)

(Side option:  Cook plantains in coconut oil and serve on the side.)
